What Exactly Is "Blue Gin"?
Blue gin earns its striking appearance not from synthetic dyes or artificial flavourings, but from an extraordinary botanical: butterfly pea flower (Clitoria ternatea).
Native to Southeast Asia, this delicate petal has been brewed for centuries as an herbal tea. The petals contain high levels of anthocyanins. Natural plant pigments that act as living pH indicators.
In a neutral-to-slightly alkaline environment (like our distilled spirit), anthocyanins rest in a deep, midnight-blue state. The moment an acidic mixer, such as tonic water, lemonade, or fresh citrus juice, is poured into the glass, the sudden shift in pH changes the molecular structure of the pigment. The result is an instant, hypnotic colour shift from deep indigo to bright violet-pink.
Inspired by the South Downs: The Adonis Blue
While butterfly pea flower provides the colour, the soul of Sussex Blue Gin is rooted firmly on our doorstep in East Sussex.
The gin was created in homage to the Adonis Blue butterfly (Polyommatus bellargus). Found fluttering across the warm, south-facing chalk slopes of the South Downs National Park, the male Adonis Blue is famed for its brilliant, iridescent sky-blue wings. It is one of the British countryside’s rarest and most captivating sightings.
Just like its namesake butterfly, Sussex Blue Gin celebrates the beauty and biodiversity of the coastal Sussex landscape.
What Does Sussex Blue Gin Taste Like?
A common misconception about colour-changing gin is that it must be overly sweet or syrupy. In reality, butterfly pea blossom contributes virtually no residual flavour, leaving a blank botanical canvas for the distiller.

Chalk-Filtered Water: Blended using natural water drawn from beneath the chalk hills of the South Downs for a remarkably soft, clean mouthfeel.
15 Balanced Botanicals: Distilled with classic juniper berries, coriander seed, angelica, fresh citrus peel, and delicate floral notes.
Tasting Notes: Crisp and juniper-forward on the nose, opening into bright citrus and layered botanicals on the palate, finishing with a lingering, silky-smooth warmth.
How to Serve Sussex Blue Gin for Maximum Theatrics
Serving Sussex Blue Gin is pure cocktail theatre. To create the ultimate pour for your guests, preparation is key:
1. The Glassware
Choose a wide Copa gin balloon glass. The broad, crystal-clear bowl gives the drink plenty of aeration while ensuring every guest has an unobstructed view of the colour transformation.
2. Pack with Ice
Fill the glass generously with fresh, solid ice cubes. Ample ice chills the spirit and slows the blending of the mixer, creating a stunning two-tone ombre effect before the drink fully shifts to pink.
3. The Pour
Measure 50ml of Sussex Blue Gin directly over the ice, letting the rich blue spirit coat the glass.
4. The Magic Splash
Pour a chilled, premium Indian tonic water or clear Mediterranean tonic gently down the inside of the glass (or over a bar spoon). Watch as clouds of purple and magenta roll through the blue.
5. The Garnish
